Salmon Mousse is a versatile food, perfect for making starters, sides and canapes. Many “vegetarian” friends of mine also eat fish, so this is a handy substitute for pate. The mousse goes quite firm after a night in the fridge so you can form it into shapes for a fancy presentation, or else just spoon [...]

Caesar salad has become immensely popular over the last few years, though most people no longer include the anchovies and prefer to include chicken and bacon. If you have the time, it can be interesting to try making the dressing for yourself instead of off the supermarket shelves.
Ingredients
1 fat garlic clove
1 anchovy fillet
1 egg yolk
1/4 tsp Dijon mustard
1 tbsp lemon juice
100ml [...]

I don’t know about anyone else, but I always overestimate when making mash. If you have some leftover mash and a tin of tuna in the cupboard, you can make fishcakes. They make a great starter because they only take a few minutes to prepare on the day.
Ingredients
Day 1
Potato mash
Tinned tuna (or tinned salmon or any other sort [...]

This is an extra healthy version of Chilli Con Carne which ends up being a vegetarian chilli with beef added in. There loads you can do to play around with this recipe – adding different beans, sweetcorn, chickpeas, taking out the celery (I have recently come across an inordinate number of people with an aversion to celery!).
Ingredients
2 onions, [...]
