Scotch beef steak with goat’s cheese butter from the Scotch Beef and Lamb website – I picked up this recipe from the Taste of Edinburgh Festival whilst learning about local produce North of the border. Scotch beef has a brilliant reputation and I’ll be trying out this recipe with some sirloin steak from the local butcher’s this week.

Risotto is much easier than you might think. I was initially put off by reports of having to stir it for an hour or some such myth – most arborio rice these days simply takes 20 minutes of stirring and makes a cheap and easy meals if you just have it with onion, peas and seasoning. This [...]

Thorntons have sent another handy recipe and they say “These are so easy to make that you can enlist the help of the kids. Be careful that they don’t eat the Thorntons Fudge Cubes whilst your back is turned! We love today’s recipe… it’s a yummy, scrummy picnic box treat! This recipe makes approximately 30 cookies”.

Risotto is relatively easy to make, but it does involve a long time spent stirring to stop the rice sticking. However, it is filling, tasty and a great alternative once the usual old recipe get boring.
Ingredients
Arborio rice
Stock (I just used a stock cube)
Handful of chopped mushrooms (any sort will do)
Seasoning
Method
Following the instructions on the packet, fry the rice in [...]

This is a very fresh and healthy dessert made with British fruits which are only available for a short period in the year. Use good quality white bread and avoid using too many blackberries as the pudding should turn out a bright pink colour.
Ingredients
1kg mixture of strawberries, raspberries and blackberries
125g caster sugar
8 thin slices cut from a [...]

This is one of the most basic pizza base recipes I could find. It doesn’t contain yeast, which can be fiddly – especially when helping children to cook. I haven’t tried it out yet, but will do so soon and let you know how I get on.
Ingredients
200g Self Raising Flour
50g Block Margarine
1/4 Pint Milk
Pizza Topping
Method
1. Preheat oven to Gas 6 or 200°c [...]

With it being Passover / Easter and whatnot I thought I’d include a recipe for lamb. When you insert slivers of garlic into lamb it tastes out of this world – the flavour gets right into the meat instead of just coating the outside or flavouring the sauce.
Ingredients
1 1.6kg lamb forequarter rolled roast
3 garlic cloves, cut into thin slivers
Salt & [...]

Marmalade is a Portugese invention that originally began with quince hence the root of the name “marmelo”. However, it has been adopted as thoroughly English fare, gracing traditional breakfast tables up and down the country and considered a national dish. It is more tart than jam and considerably more difficult to make – hence the formation of [...]
