I don’t know about anyone else, but I always overestimate when making mash. If you have some leftover mash and a tin of tuna in the cupboard, you can make fishcakes. They make a great starter because they only take a few minutes to prepare on the day.

Ingredients

Day 1
  • Potato mash
  • Tinned tuna (or tinned salmon or any other sort of fish)
  • Optional spring onion
  • Seasoning
Day 2
  • Eggs
  • Breadcrumbs (you can use a blender to make these – grating takes ages)

Method

Day 1

Mix up the tuna flakes and mash with some black pepper and spring onion. Roll it into a baguette shape and wrap in tin foil. Pop into the firdge to chill overnight. If you have too much food to eat up – you can even freeze this for fishcakes another day.

Day 2

Take the foil baton out of the fridge and slice into medallions, cover each in beaten egg and roll in the breadcrumbs. You can either bake on a greased baking tray until the breadcrumbs are golden brown (about 180° gas mark 7 for around 25 minutes) or shallow fry. The only thing that needs to be cooked is the egg coating – the rest is pre-cooked and only needs heating. Serve with salad, chilli sauce and a wedge of lemon.

    potato mash or mash potato is, potatos that have been peeled, then diced and boiled in hot water until soft. The water is then drained, then you can add milk, butter, egg, cream, cheese cream (depending on your personal preference) “mash” all the ingredience together until smooth then serve. Very yummy! most people just add milk and butter!
