Stuffed jacket potatoes are a sure way to win round fussy eaters as all the flavour is all packed into the usually bland baked spuds. It also makes serving up easier and allows you to do most of the washing up before eating.

Ingredients
- Baking Potatoes
- Filling (e.g. tuna, leeks, cheese)
Method
- Bake the potatoes in a medium oven for around one hour. Check they are baked by piercing with a sharp knife. If the knife passes into the centre easily, they are ready.
- When baked, halve the potatoes and scoop out the filling – leave some potato round the sides so the skin keeps its shape. Remember to use an oven glove!
- Combine the filling of your choice with the scooped out potato. Pile high into the leftover skins and top with cheese.
- Bake for a further 15 minutes the serve.
